Everyone is always looking for a dinner roll that is appropriate for an everyday dinner and festive events such as Thanksgiving and Christmas dinners. This roll tastes amazing all by itself or with butter and/or jam. It can soak up gravy and clean up a plate and tastes great with salads, and with virtually any other food except dessert, although some children seem to consider these rolls to be dessert. Baked correctly, these rolls are very high and airy and seem to provide a lot of food than the concomitant calories would indicate.
FLUFFY ROLLS RECIPE: (BEST ALL-AROUND WHITE ROLL)
1 pt. scalded milk
1⁄2 cup butter
1⁄2 cup sugar
1 tsp. salt
3 eggs, beaten
2 pkgs. yeast (2 T.)
1⁄4 cup warm water
5 1⁄2 cups bread flour
Scald 1 pint of milk; add butter, sugar and salt and heat til butter is melted. In separate small bowl, dissolve yeast in warm water for 5 minutes. When milk mixture has cooled, put in large mixing bowl. Add 2 cups flour and mix thoroughly with wooden spoon. Add yeast and beaten eggs and mix thoroughly.
Let rest for a few minutes. Add remaining flour 1 cup at a time and mix until soft dough forms. Dump dough onto floured surface and knead for 2-3 minutes, keeping it a soft dough, and until flour is completely incorporated. Only add flour as necessary so that the dough is not sticky. Clean out mixing bowl of flour fragments and add 2T. cooking oil. Add dough that is formed into a large smooth ball and turn once in bowl to grease the top of dough in bowl. Let dough raise until doubled in size.(You can speed up this process by putting dough on top oven shelf with a pan of hot water on the bottom shelf).
Punch down and cut dough in half. Roll out into large circle on floured surface, about 1⁄2 “ thick, and use biscuit cutter (or round glass top) to cut circles. Fold each roll in half and dip in butter to place on jelly roll pan or cake pan. Line up rolls next to each other, but allow room to rise until double in size, about 45-60 minutes. Bake in 350 degree oven for about 20 minutes.
