How To Make The Best Apricot Crepes (Quick & Easy)
HOT CREPES WITH APRICOT SAUCE
2 eggs
Pinch salt
1 level cup flour
1 cup milk, plus 2 T.
2 T. butter, melted
Combine all ingredients in blender or food processor and blend for 1 minute. Scrape down sides and blend 15 seconds longer. Refrigerate for at least 1 hour. Make crepes according to directions for using your own crepe maker or medium skillet pan. Makes about 6 crepes. Recipe may be doubled.
Hot Apricot Sauce:
2/3 cup apricot jam
1/3 orange juice
2 T. butter
1 tsp. grated lemon rind or zest 1 T. lemon juice
Combine ingredients and cook over medium heat until hot but not boiling. Remove from heat. To assemble: Fill each crepe with 1 1⁄2 T. cream cheese mixture and roll up. Place seam side down in buttered 9x13 baking pan or dish. Bake at 350 degrees for 10-15 minutes. In the meantime, make apricot sauce. For each serving arrange 2 crepes on

dessert plate and spoon hot apricot sauce over top. Makes 8 servings. You can top with sweetened whip cream, if desired.
Filling:
1 (8 oz.) pkg. cream cheese
1⁄4 cup butter, softened
1⁄4 cup sugar
1 1⁄2 tsp vanilla extract
1 tsp. grated lemon rind or zest.
Combine all ingredients until fluffy and well blended and set aside. This is a huge hit wherever I serve them.
