Ingredients
1 egg (50g)
120 g fresh milk
30 g caster sugar
1.5 tsp dried yeast (5 g)
260 g high protein flour (bread flour)
1/2 tsp salt
35 g butter (for main dough)
10 cut pieces of butter each about 10-15g (frozen for wrapping)
Preparation
1. Grease a baking tray and set aside.
2. Place egg, milk, sugar and yeast into mixing bowl, mix 1 min 30 sec/speed 3.
3. Add flour and salt, knead 2 min/dough mode.
4. Add butter into mixing bowl. Knead 2 min/dough mode.
5. Transfer the dough to pastry mat, cover and rest for 10 minutes. Shape it into little round doughs of 50g each. Close your hands slightly into a 'C' shape, press on half of the round dough, make it look like a cone shape. Take the rolling pin and press it gently. Roll in the butter pieces from the broadest end to the narrowest end. You will end up with a crescent shape similar to a croissant. Transfer onto a baking tray.
6. Proof for 45-60min or until doubled.
7. During the last 20 minutes of proofing, preheat the oven to 170°C
8. Prior to sending the buns into the oven, egg wash, and (optional) sprinkle some salt flakes onto each bun. Spray with water.
9. Bake in preheated oven (170°C) for 15-20 minutes or until browned. Allow them to cool on a cooling rack before serving and store in an airtight container once the buns are cooled.
