Light, cottony soft bread🍞 coupled with the earthly flavors of Matcha🍵, this beautiful treat is perfect for tea time and will bound to impress your guests! Eat it on its own or eat it with jam or butter for the perfect treat! 👩🍳
Here is the recipe:
Ingredients:
310 g high protein flour (bread flour)
230 g fresh milk, cold, plus extra for brushing
1 egg yolk
30 g sugar
½ tsp salt
1 tsp dried yeast powder
25 g butter, softened
2 tbsp matcha powder
Preparations:
1. Place 20 g high protein flour and 100 g milk in a mixing bowl, cook 3 min/80°C/speed 3. Let stand for 10-15 minutes.
2. Add 130 g milk, egg yolk, sugar, salt, 290 g high protein flour and yeast, knead the dough at Dough mode/5 min.
3. Add butter, knead the dough at Dough mode/3 min. Transfer dough to a pastry mat. Shape into a ball and let proof in a warm place until doubled in size (approx. 45 minutes). Punch down the dough to deflate. Divide dough into 2 equal portions.
4. Place a reserved dough and matcha powder in a mixing bowl, knead the dough at Dough mode/2 min. Transfer dough to a pastry mat. Roll milk dough and matcha dough into ball shape. Using a rolling pin, flatten each ball into long rectangular sheet. Place matcha dough sheet on top of milk dough sheet and roll into a log shape. Arrange dough logs in a loaf tin (19 cm x 10 cm x 10 cm) and let proof until dough doubled in size (approx. 40 minutes). During last 15 minutes, preheat oven to 180°C.
5. Brush a layer of milk on top of dough and bake for 25 minutes (180°C) until golden brown. Remove milk bread from tin and allow to cool on a cooling rack before slicing and serving.
