Tachina
Ingredients
1 cup brown basmati rice, rinsed in cold water several times and soaked for 30 minutes
1 large onion, finely chopped
2 large carrots (approx. 250g) chopped into small cubes
1 cup frozen peas
30g pine nuts or slivered almonds
30g raisins
30g barberries rinsed several times
250g firm tofu frozen then thawed and water squeezed out
2tbsp tamari (or low salt soy sauce)
2 tbsp nutritional yeast
4tbsp Chopped cilantro
Spices
1 tbsp of 7 spice mixed ( recipe for making your own below)
1 tsp garlic powder
3 dried limes, if not available use the juice and zest of one lemon or lime.
1 tsp turmeric
½ tsp black pepper
Salt to taste
7 spice mix
1tbsp ground cumin
1tbsp sweet paprika
1 tbsp ground coriander
½ tbsp of each of ground , cloves, nutmeg, cinnamon and cardamom.
Mix together and store in a jar
If using dry limes, make hole in the limes with a fork, put in a bowl and adda cup boiling water, make sure they are submerged, you can put a small plate on top to keep them submerged, leave to soak for 30 minutes.
To make the “mince meat” mix add the tamari, nutritional yeast and garlic powder and mix into a paste, crumble the tofu and mix with the paste. Put on a baking sheet covered with parchment paper and bake in the oven at 180C for 20-25 minutes. Half way through the cooking give the mixture a mix.
1. Dry roast the pine nuts on the stove on low heat until golden, keep moving as they can burn easily. Remove once toasted
2. Add 2tbsp hot water or broth to the pan and sauté the carrots for 5 minutes
3. Add chopped onions and sauté. Keep adding water or broth a tbsp at a time until onions are caramelized
4. Add the drained rice and rest of ingredients incuding the “mince meat” tofu. Leave a tbspof cilantro for garnishing,
5. Squeeze the dry lime out and discard, use the soaking liquid to add to the rice mixture. Make up the liquid to make 1.5 cups by adding water or broth. Mix and cover
6. Bring to a boil, once boiled cook on low for 25-30 minutes until all water has been absorbed, then take of the heat and let it rest for 10 minutes.
7. Fluff the rice and serve
Notes: once the water boils try not to open the lid. Also do not keep mixing while cooking as that will cause the rice to break and get sticky
