🌾 Jaggery Sheera (Gulacha Sheera) – Traditional & Healthy Sweet
A warm, comforting Maharashtrian-style sheera made with jaggery instead of sugar. It has a rich, earthy taste and is perfect for breakfast, prasad, or evening cravings.
📝 Ingredients (Serves 3–4)
1 cup Rava (Semolina / Sooji)
¾ to 1 cup Grated Jaggery (Gul) (adjust to taste)
2½ cups Water
3 tbsp Ghee
5 Cashews, chopped
A pinch of Salt (enhances sweetness)
👩🍳 Step-by-Step Method
1️⃣ Roast the Rava
Heat 2 tbsp ghee in a thick pan.
Add rava and roast on low–medium flame.
Stir continuously till it becomes aromatic and light golden.
This step gives sheera its signature texture—don’t rush!
2️⃣ Fry Dry Fruits
In the same pan, push rava aside.
Add 1 tsp ghee and fry cashews till golden.
Mix them into the rava.
3️⃣ Prepare Jaggery Water
In another vessel, heat water.
Add grated jaggery and let it melt completely.
Strain if jaggery has impurities.
4️⃣ Cook the Sheera
Slowly pour the hot jaggery water into roasted rava.
Stir continuously to avoid lumps.
Be careful — mixture will bubble initially.
5️⃣ Let It Thicken
Cook on low flame for 3–4 minutes.
Add pinch of salt(optional).
Mix well till ghee starts leaving the sides.
6️⃣ Finish with Ghee
Add remaining ghee.
Cover and steam for 2 minutes.

✔ Ghee aroma comes out
✔ Not dry, not sticky — perfectly moist
🌿 Traditional Tips (Aaji Style)
Always roast rava patiently — this decides taste.
Use dark village jaggery for authentic flavour.
Adding a pinch of salt balances sweetness beautifully.
