The Ultimate Sandwich: The King Among Them All

Описание: This Porchetta Sandwich is going in my new top 5 favorite sandwiches of all time and for good reason.

Pork belly porchetta recipe: 1 large pork belly (skin on preferred)
1 tbsp black pepper
1 tbsp + 2 tsp Rosemary salt
1 tbsp fennel seeds
1 tbsp red pepper flakes
10 cloves of garlic puréed
Zest of 1/2 orange
Zest of 1 lemon

Roasting Instructions:
425 ( 218 c) 40 minutes
350 (176 c) 45 minutes
300 (148 c) 45 minutes
450 (232c) 20 minutes
1/2 hour resting time

Chimichurri sauce:
(divide herbs in half after prepping)
1 bunch of Italian parsley
1 bunch cilantro
1 bunch basil 3 oz
1 small bunch of fresh mint
1 small bunch of fresh chives
1 small bunch of dill
3 cloves garlic
2 medium shallots or 1 large shallot
1/3 cup avocado oil
2/3 to 1 cup olive oil
1/2 tsp chili flakes
1 1/2 tsp kosher salt
50/50 red wine vinegar to lime juice mixed to order

Homemade Garlic mayo full recipe:
2 large eggs (100 grams) or 3.5 oz
2 tbsp water (45 ml) this is different than the conversion you find online but it is CORRECT
3/4 tsp Maldon salt
1 1/4 cups avocado oil (295 ml)
2 cloves garlic (8 grams) 0.25 oz
2 tbsp + 1 tsp distilled white vinegar (50 ml)
