Detailed Sabudana Paratha Recipe
Ingredients
1 cup sabudana (soaked for 4–5 hours and drained)
1 medium boiled potato, grated
1/2 cup upwas atta (rajgira or bhagar flour)
1/2 cup dahi (curd)
1 tsp jeera (cumin seeds)
3–4 green chilies (adjust to taste)
1/3 cup roasted groundnuts, coarsely ground
Water as needed
Sendha namak (salt) as per taste
Ghee for cooking
Method
Prepare Sabudana Paste
In a mixer grinder, add soaked sabudana, green chilies, and a little water. Grind into a smooth and fine paste.
Make the Batter
Transfer the sabudana paste to a mixing bowl.
Add grated boiled potato, dahi, sendha namak, jeera, roasted groundnuts, and upwas atta.
Mix everything well.
Adjust Consistency
Add water gradually and mix to form a smooth batter with uttapam-like spreading consistency. The batter should not be too thick or too runny.
Cook the Parathas
Heat a tawa on medium flame and grease it lightly with ghee.
Pour a ladle of batter and spread gently into a small paratha.
Roast Until Crispy
Drizzle ghee around the edges and cook until golden and crisp from both sides. Flip carefully and cook evenly.
Serve Hot
