Basics: At Stauning we do a double distillation in alembic copper pot stills. All our stills are heated by using open fire. We use 16 wash stills and 8 spirits stills.
Direct firing the distillery’s 24 copper pot stills helps to create complex and deep flavours and gives weight and character to our whiskies. First in a wash still and then in a spirit still. Not the easiest solution, but we certainly believe it is the right solution. In this way we make whisky using the same principles as the Scots have done for centuries, and we get a whisky with plenty of character.
The first distillation – The wash is pumped into our wash stills. During distillation the beer with an alcohol content of 6-8% will be distilled to a low wine with an alcohol content of approx. 25%. This low wine is then pumped into our spirit stills for the second distillation.
