Basics: We have finally reached the new make. The un-matured whisky running of the spirit stills.
This time you will get an insight in how the different cuts are being made during distillation to make sure we collect only the alcohol that after maturation will give the bottle of Stauning Whisky we want. A whisky with no compromises.
The film will also show you how it looks inside the spirit stills during distillation and what the flames looks like underneath the spirit stills.
We never get tired of the fascination, and the smell, we experience every day with the spirit still distillation. It is amazing.
The second distillation – The low wine is pumped into our spirit stills. During distillation the low wine with an alcohol content of approx 30% will be distilled to a spirit with an alcohol content of approx. 68%. This spirit is then pumped through our spirit safe.
Once the distillation is completed, the raw distillate is kept in stainless steel tanks before filling in casks.
Direct firing the distillery’s 24 copper pot stills helps to create complex and deep flavours and gives weight and character to our whiskies. First in a wash still and then in a spirit still. Not the easiest solution, but we certainly believe it is the right solution. In this way we make whisky using the same principles as the Scots have done for centuries, and we get a whisky with plenty of character.
