A project I have been intimidated to start and finish for a long time. I wanted to do this steel justice, but felt I wasn't ready. It was a challenge to build that into a knife that worked well with its characteristics. I decided on making a single bevel out of it, a shorter length Kiritsuke Yanagiba to take advantage of its slight assymmetric nature. I felt it made sense to make a sushi knife for sashimi and nigiri with something so special.
I gently forged the blade to have the pattern follow the profile, but not distort it too much. After that I heat treated it, then ground it, being careful with the hollow grind on the backside to maintain a crisp ura and tight uraoshi.
