Making cottage cheese at home is easier than you think! It's fresh, healthy, and perfect for the whole family—especially kids. With just a few simple steps, you can create a delicious and nutritious treat everyone will love!
Ingredients:
Milk (room temperature if possible)
Kefir (about 10-12 tablespoons of kefir for 4 litres of milk)
Preparation:
1. Pour milk into a glass bowl. Add the kefir to the milk and mix.
2. Allow the mixture to ferment at room temperature for 1-2 days until the milk turns into kefir.
3. Place the bowl in the microwave for 7-10 minutes. Keep an eye on it—when a light greenish liquid (whey) appears, the cottage cheese is nearly ready.
4. Let it cool slightly. Then strain the mixture through a colander lined with cheesecloth to separate the whey from the cottage cheese.
5. Leave it to drain overnight. By morning, your cottage cheese will be ready.
Serving Suggestions:
For a creamy version, mix a portion of the cottage cheese with sour cream, milk, and sugar.
Use it to make syrniki (Russian cottage cheese pancakes) for kids.
