The BirdHouse chef, Paige Murtaugh, introduces the nopal cactus (aka prickly pear) how to harvest and prepare nopales safely, and demonstrates two delicious nopales recipes!
Ingredients You'll Need:
Nopales (3-4 paddles)
Red Onion (1)
Yellow Onion (1)
Anaheim Chiles (or chiles of choice)
Cojita Cheese
Salsa Verde
Limes (3-4)
Avocadoes (2)
Tomato (1)
Cilantro
Local edible flowers for garnish
Tortillas
Salt
Pepper
Recipe #1: Nopales Tacos
Harvest 3-4 paddles of the nopal using gloves, a knife, and tongs.
Clean the paddles with a knife by scraping against the grain until all needles are gone. Try to avoid removing too much of the skin!
Wash the nopales.
Slice the nopales vertically about one inch apart.
Put a little oil in a pan, wait for it to heat, and put your nopales in. Season with salt. Flip after about 5 minutes over medium heat, checking for desired color. (Paige likes them darker, as demonstrated in the video.) Remove from pan.
Add oil to another pan, and once hot, add sliced yellow onion. Add salt, and cook until golden brown and carmelized.
Warm tortillas and chiles on pan.
Assemble! On the tortilla, stack: nopales, carmelized onion, avocado, salsa verde, cojita cheese, edible flowers, and top with lime juice.
Eat!
Recipe #2: Raw Nopales Salad
Clean nopales in the same manner used above. Dice finely and cover in salt for several hours. Rinse the nopales
Dice finely desired quantity of each based on your preferences: red onion, tomato, avocado, nopales, lime juice.
Toss in a bowl.
Add salt, pepper, and edible flowers!
Eat!
