Sourdough Crumpets

Описание: Have an old sourdough that is well beyond its prime? Make some crumpets with it!

These are a quick-bread version of crumpets that only take a few minutes to make and take very few ingredients. The only special piece of equipment you'll need are some crumpet rings (aka english muffin rings). If you don't have some you can fashion them from some aluminum foil, mason jar rings, or some old tin cans. Or just buy some for a few bucks online.

Recipe:
145g old sourdough starter
75g flour
75g water
1g salt
20g oil
1/4tsp or just shy of a gram of baking soda

Mix all of the ingredients except the baking soda until well combined. Butter the crumpet rings and place in a hot pan. Pour a small amount of oil into each ring and move the rings around to get the pan evenly oiled.

*Quickly* mix the baking soda into the batter and portion the batter evenly into the four rings.

Let cook, uncovered for several minutes. When the tops look almost fully
cooked, remove the rings with tongs and flip over the crumpets to finish
cooking.
