Hi, I’m Noris — the Kung Fu Baker.
In this video, I put a fully revived sourdough starter to work and bake with it at scale, using loaf pans to demonstrate reliable, repeatable results for beginners and working professional bakers alike.
This starter was pulled from the refrigerator after nearly 3 months of inactivity and revived through a deliberate, step-by-step process documented across this mini-series. Before baking, the starter consistently tripled in volume within 4–6 hours — a non-negotiable benchmark I use when baking multiple loaves by hand.
This bake proves the starter isn’t just “alive,” but strong, predictable, and ready for real-world use.
I also share real-world baker insights on:
Bulk fermentation timing and monitoring
Avoiding overproofing when scaling batches
Shaping and pan prep for consistent results
Scoring techniques to guide dough expansion
