These banana oat yogurt muffins are perfect for breakfast or a light snack. Although the texture is not quite like a typical bakery muffin, the taste is delicious. So if you happened to have super ripe bananas sitting around, try this recipe out! The whole thing is made in a blender, whip the batter up in no time! Enjoy!
Ingredients (makes 6):
1 cup oats (rolled or quick)
3/4 tsp baking powder
1/4 tsp baking soda
1 medium ripe banana
1/2 cup Greek yogurt (I used brand Fage)
1 egg
2 tbsps sugar (white, brown, honey, etc)
1/4 cup walnut pieces (optional)
2 tbsps chocolate chips (optional)
Notes:
Oat flour (gluten-free!) is simply ground up oats that turns into a flour-like texture. You can use store-bought or make it yourself.
These muffins are gluten-free, oil-free, healthy, quick, and easy!
