This is one of our favorite and not very well known vegetable which is slightly sweet and has a texture of fruit such as apple but it can be harvested throughout the winter. Plus it's low calorie and a probiotic with it's slight inulin content. Yacon is also often used as the main ingredient in diabetic foods.
