Crispy Fried sweet potato pancakes are crispy savory pancakes. That tastes sweet without adding the sugar. This is a popular dish in Korea that can be a snack, appetizer, or light lunch. Most of all, it’s easy to make with a few ingredients
Ingredients:
Vegetable:
2 Large, sweet potatoes, julienned (cut into thick sticks)
1 Carrots, julienned (cut into thick sticks)
½ Onions, sliced
2 stalks green onions, or some Chinese chives, cut into 2 inch long pieces
1 teaspoon of salt
½ teaspoon of pepper
½ teaspoon of garlic powder
1 cup of potato starch
Wet ingredients (Batter):
1 cup of Crispy Frying Mix flour
½ cup of potato starch
1 ½ cup of sparkling water or soda water
Dipping sauce:
Homemade tsuyu sauce or store bought tsuyu sauce dilute with water according to the package.
Steps:
In a large bowl, add all the sweet potatoes and vegetables.
Add salt, pepper and garlic powder. Mix everything together with 1 cup of potato starch. Set aside
On a large bowl, mix 1 cup of Crispy Frying Mix flour, ½ cup of potato starch
Add 1 ½ cup of cold sparkling water with ice, and mix together,
Add wet ingredients to vegetable mix, stir it until vegetables are coated well
In a pan, turn high heat
Add plenty of oil
Add a large scoop of vegetable mix and spread evenly to the side of the pan
Pan fry it approximately 2-3 minutes on each side over medium heat
Flip it over and press it with spoon or spatula, and pan fry it until it’s golden and brown
In between cooking add more oil on the pan as needed so the pancakes can be crispy and crunchy.
Transfer to a tray with paper towels to drain the excess oil.
Serve with tsuyu dipping sauce.
