INGREDIENTS:
Lettuce:
1 heads of butter lettuce, or iceberg lettuce, or romaine lettuce.
Wash and drain well. Set aside
Filling:
1 Lb. of shrimp:
Dice the shrimps and marinate shrimp with 1 Tbsp of ginger cooking wine (Or 1 teaspoon of minced ginger and 1 Tbsp of cooking wine) and 1/2 Teaspoon of salt and pepper. Set aside.
1 lb. of Chicken thigh or any meat:
Dice the chicken and marinate with 1 Tbsp of ginger cooking wine (Or 1 teaspoon of minced ginger and 1 Tbsp of cooking wine) and 1/2 Teaspoon of salt and pepper
2 Tbsp of cooking oil
1 Tbsp of minced garlic
1 teaspoon of minced ginger
1 onion, diced
1 (8-ounce) can whole water chestnuts, diced
2 stalks of chopped green onions
Optional vegetables:
1 cup of mushrooms diced
Green, red, yellow bell peppers: diced
1-2 carrots: diced
Seasoning sauce:
3 Tbsp of soy sauce
3 Tbsp of dark soy sauce
3 Tbsp hoisin sauce
1 Tbsp of sugar
1 teaspoon of salt and pepper
1 Tbsp of sesame oil
Starch slurry: mix 1 Teaspoon of cornstarch and 2 tbsp of water
In a mixing bowl, add all the sauce except the sesame oil. Stir together and set aside.
Dipping sauce:
1/4 cup of water
2 Tbsp of sugar
2 tbsp of soy sauce
4 tbsp of vinegar
2-4 Tbsp of peanut butter slightly melted or room temperature
3 Tbsp of hoisin sauce
1 teaspoon of Chinese hot mustard,
1 Tbsp of sesame oil
In a mixing bowl, combine everything and whisk it together. Set aside.
For Garnishing:
Some chopped green onions or chopped cilantro
Some roughly crushed roasted peanuts
Steps:
In a pan, add 2 Tbsp of cooking oil then cook shrimps on high heat for 2 minutes. Set aside.
In the same pan, add oil and chicken. Cook approximately 5 minutes on medium to high heat, until chicken is cooked crispy and brown.
Add garlic, ginger and onions. Cook approximately 3 minutes until onions are becoming translucent.
Add all other diced vegetable, bell peppers and carrots, mushrooms, water chestnuts. Approximately 1- 2 cups total. Cook for 3 minutes until vegetables are tender.
Then add the already cooked shrimps and stir it together for a minute.
Add seasoning sauce (approximately 8-10 Tbsp), stir it 2-3 minutes on high heat.
Turn off the heat and sprinkle some chopped green onions and sesame oil, stir it to mix well.
Serve a few spoonful of chicken filling into center of lettuce leaf. Drizzle some dipping sauce on top, and sprinkle some chopped green onions/cilantro, and crushed peanuts. Or Shrimps can be on top of each wrap for garnish.
