Reuben sandwiches are one of my favorites. It is hard for me to resist them when I see one on the menu. I love the combination of the rich meat, tangy kraut and nutty, melty cheese. They are easy to make and I’ll let you in on my trick to make sure the meat is hot throughout without burning the bread. I use mayonnaise on the outside of the bread instead of butter because I think it makes it extra crunchy.
Reuben Sandwich
Makes 2
3 Tbsp. mayonnaise
4 slices pumpernickel bread
3 Tbsp. thousand island dressing
8 oz. corned beef, thinly sliced (I like Boar’s Head)
4 slices swiss cheese
1 cup sauerkraut, well drained
1. Place griddle on the burner over medium heat.
2. Divide the corned beef into two piles. Gently warm on the griddle while you prepare the bread.
3. Spread mayo evenly over one side of each slice of bread. Spread thousand island dressing evenly over the other side.
4. To make each sandwich, place a slice of bread on the griddle with the mayo side down. Top each with a slice of cheese.
5. Place warm corned beef on top of the cheese and put sauerkraut on top. Top with cheese and then the remaining slice of bread with the mayo side on top.
6. Cook sandwich on both sides until the bread is crispy and the cheese has melted. Time to eat!
