Homemade baked beans take some planning to soak the dry beans overnight, but they are so delicious and have no preservatives or funny chemicals! They are more smokey and bacon-y than the canned version, which we love. These have the right amount of sweet and tangy and the molasses adds depth rather than brown sugar. So good for any party or cookout!
Baked Beans
Serves 12
2 pounds white beans, dry
12 oz. bacon, diced
2 cups onion, white or yellow, diced to ¼”
½ cup garlic, sliced
3 each bay leaves
1 cup ketchup
¼ cup mustard, yellow
¼ cup vinegar, cider
½ cup molasses
1 tsp. salt
2 tsp. pepper, black ground
1. Place beans in a large bowl and rinse a couple times with cool water. Drain and cover with hot tap water. Allow to soak overnight.
2. In a Dutch oven, heat bacon over medium heat. Add onions and garlic, and sauté until veggies are translucent – about 10 minutes.
3. Add beans, including any remaining liquid, and bay leaves to the pot. Add water to cover the beans. Cover the pot – leaving a ½” crack and simmer until beans are soft – about 75 minutes.
4. Reduce heat to low. Add ketchup, mustard, vinegar, molasses, salt and pepper and simmer uncovered for 15-20 minutes until they are the consistency you want.
