Ingredients:
For the Cupcakes -
1/2 cup salted butter, softened
1 1/4 cup + 3 tbsp light brown sugar, packed
3 egg whites
2 tsp vanilla extract
1/2 tsp coconut extract
3/4 cup full fat sour cream
1/2 cup Blue Chair Bay Coconut Spiced Rum Cream
1 3/4 cup cake flour, spooned and lvled
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp ground cinnamon
For the Frosting -
1 cup salted butter, softened
4 oz cream cheese, softened
4 cups powdered sugar
1 tbsp Blue Chair Bay
Coconut Spiced Rum Cream
1 tbsp vanilla extract
pinch of salt
Directions:
For the cupcakes - To a large mixing bowl, cream together the butter and brown sugar. Then, mix in the egg whites until well combined. Add in the sour cream, vanilla extract, coconut extract, and coconut spiced rum cream. Mix until fully combined. Lastly, add in all of the dry ingredients, mix until combined scraping the bowl as needed.
Using a standard size cupcake pan with cupcake liners, fill each liner 3/4 of the way full. Into a preheated oven at 350 for 18 - 20 minutes, depending on your oven or until a toothpick comes out clean with just a few crumbs. Let the cupcakes cool completely before adding on the frosting.
Make the frosting - To a large mixing bowl, cream together the butter and cream cheese. Then, mix in the coconut spiced rum cream, vanilla extract, and half of the powdered sugar. Mix well, then add in the remaining powdered sugar and the pinch of salt. Transfer the frosting to a piping bag fitted with an M1 piping tip.
Assemble the cupcakes - Grab a cupcake and pipe on the frosting. For an added touch, sprinkle on a light dusting of ground cinnamon. Enjoy!
