Sour cream adds moisture, while hot water blooms the spices and activates the baking soda for a soft, airy crumb. A small amount of habanero brings gentle heat that balances rich toppings like whipped cream and cream cheese frosting without overpowering the classic gingerbread flavor.
I also decorate the cupcakes three different ways—powdered sugar, whipped cream, and cream cheese frosting—so you can choose the finish that works best for your heat tolerance and sweetness preference.
