INGREDIENTS:
½ cup cumin seeds
10-12 cloves
3-4 black cardamoms
3-4 sticks of cinnamon
2 tbsp vinegar
1 cup jaggery
1 cup mustard oil
2 tbsp grated ginger
2 tbsp chopped garlic
2 tbsp degi mirch powder
2 tbsp mustard powder
salt to taste
1 cup sliced mooli
1 cup sliced carrot
1 cup sliced turnip / shalgam
1 cup cauliflower florets
1 cup slit green chili
METHOD :
For Gajar, Mooli, Shalgam Achaar, dry roast ½ cup cumin seeds,10-12 cloves,3-4 black cardamoms,3-4 sticks of cinnamon. Cool and grind to a coarse powder. Add 2 tbsp vinegar to 1 cup jaggery and keep it aside. Heat 1 cup mustard oil in a kadai, add 2 tbsp grated ginger, 2 tbsp chopped garlic sauté for 10 mins till they turn golden brown. Add the jaggery & vinegar mixture, cook till the jaggery melts. Add 2 tbsp degi mirch powder, 2 tbsp mustard powder, prepared garam masala, salt to taste , mix well. Now add the vegetables 1 cup sliced radish / mooli,1 cup sliced carrot,1 cup sliced turnip / shalgam,1 cup cauliflower florets,1 cup slit green chili. Mix well. Gajar, Mooli, Shalgam Achaar is ready. Cool & store in an airtight bottle.
