INGREDIENTS:
1 tsp finely chopped cauliflower
1 tsp finely chopped carrot
1 tsp finely chopped beans
1 tsp peas
1 tsp finely chopped capsicum
2 cups vegetable stock
½ cup sweet corn kernels
½ cup grated baby corn
salt to taste
½ tsp crushed pepper
METHOD:
For Sweet corn vegetable soup, in a microwave safe bowl take 1 tsp finely chopped cauliflower,1 tsp finely chopped carrot,1 tsp finely chopped beans,1 tsp peas,1 tsp finely chopped capsicum add 1 tbsp water cook in the microwave for 5 mins. In a pan add 2 cups vegetable stock, add ½ cup sweet corn kernels, add ½ cup grated baby corn ,salt to taste add ½ tsp crushed pepper cook for 10 mins. Add 1 tbsp corn flour mixed in water and cook for another 5 mins. Add the cooked vegetables, add 1 tbsp fresh cream, switch off the gas. Sweet corn vegetable soup is ready. Serve hot.
