Today, I'm taking 5 main ingredients from the Dollar Tree (along with some spices and Pantry staples) to make 5 different healthy meals for 1 for this next work week. I hope you all enjoy!
Dollar Tree Grocery List: $6.25
California Blend
Brown rice
Lentils
Cubed tomatoes in sauce
Pepper and onion mix
Curried Lentils and Cauliflower Over Brown Rice
1/4 cup tomato sauce from diced tomato can
1/4 teaspoon garlic powder
1 tsp curry powder
1/4 teaspoon white pepper
1 cup cooked lentils
1/4 cup diced tomatoes
1/4 cup sliced carrots
1/2 cup collar pieces
1 tablespoon minced onions
1/4 cup water
1/2 teaspoon salt
Combine all ingredients in a pot and bring to a simmer on medium heat. Cook until veggies have reached desired tenderness and serve with a cup of cooked brown rice.
Stir Fried Lentils and Brown Rice:
1 tablespoon minced onions
1 tsp Minced garlic
1 tablespoon oil
Sauté garlic and onion in oil in a small pan.
1/4 cup chopped carrots
1/4 cup chopped tomatoes
1 tablespoon chopped pepper and onions
1/2 cup cooked lentils
1 cup cooked brown rice
Salt to taste
Add remaining ingredients to your pan and cook while stirring to avoid burning. Enjoy!
Tomato Sauced Lentils Over Brown Rice:
1/2 cup tomato sauce
1/4 cup cubed tomatoes
1/8 cup slivered carrots
1 tablespoon minced onions
1/2 cup broccoli stocks
1/2 teaspoon salt
1 tsp cumin
1/2 teaspoon minced garlic
Combine all ingredients in a pot and bring to a simmer on medium heat. Cook until veggies have reached desired tenderness and serve with a cup of cooked brown rice.
Roasted Veggies Over Brown Rice:
1/2 cup sliced peppers and onions
1 Tbs oil
1/2 cup cubed tomatoes
1/2 teaspoon salt
1/2 teaspoon cumin
1/4 teaspoon white pepper
Heat oil and Pan and add peppers and onions, tomatoes, and salt. Stir and allow to saute for 1 minute. Add remaining ingredients and cook until well heated. Serve over 1 cup cooked brown rice.
Roasted Pepper and Onion Lentils With Cauliflower Rice:
About 1 cup finely chopped Cauliflower
1/2 teaspoon garlic powder
1 cup cooked Brown rice
Cook Cauliflower Over medium heat for 2 minutes stirring frequently to avoid burning. Add garlic powder and rice and stir to combine. Set aside.
1 Tbs oil
1 tsp minced garlic
1/2 cup sliced peppers and onions
1/2 tsp salt
1/2 cup cooked lentils
Heat oil in a pan and add minced garlic and peppers and onions and salt. Stir and allow to cook for one minute. Add 1/2 cup cooked lentils. Stir and cook until heated through. Serve with prepared Cauliflower Brown rice.
