Carrot Cake with Cream Cheese Frosting recipe🥧🥕

Ingredients
For the cake:
• Butter (for greasing the pan)
• 1 organic orange (zest and juice)
• 230–280 g sugar
• 400 g carrots, peeled and grated
• 4 eggs
• 240 g sunflower oil
• 250 g all-purpose flour
• 2 tsp baking powder
• 2 tsp baking soda
• 1½ tsp ground cinnamon
• ½ tsp ground nutmeg
• ¼ tsp salt
For the cream cheese frosting:
• 30–50 g powdered sugar
• 80–100 g white chocolate, chopped
• 50 g butter, cubed
• 300 g cream cheese
• Freshly squeezed orange juice

Instructions
1. Preheat your oven to 180°C (356°F). Grease a rectangular baking pan (approx. 30 x 24 x 6 cm) with butter. Zest the orange and squeeze the juice. Set both aside.
2. Place the sugar and orange zest into a blender. Blend in short pulses until the zest is finely chopped and well combined with the sugar. Set aside.
3. Grate the carrots using a grater or food processor. Set aside.
4. In a large bowl, beat the eggs, sunflower oil, and orange sugar using a hand mixer or stand mixer on medium speed until the mixture becomes light and foamy (about 1–2 minutes).
5. Add grated carrots, flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix gently on low speed just until combined. Avoid overmixing.
6. Pour the batter into the prepared pan and bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Let it cool completely in the pan.
7. In a small saucepan over low heat (or using a double boiler), melt the white chocolate with the butter. Stir until smooth. Let it cool slightly.
8. In a mixing bowl, beat the cream cheese with powdered sugar and orange juice using a mixer until smooth. Add the melted chocolate-butter mixture and beat again until creamy.
9. Once the cake is fully cooled, spread the frosting on top.
