🥖 Smoked Trout Rillettes Recipe
Ingredients:
✅ 200g smoked trout fillets, skin removed, flaked
✅ 100g cream cheese, softened
✅ 50g unsalted butter, softened
✅ 2 tbsp crème fraîche (or sour cream)
✅ Zest and juice of 1 lemon
✅ 1 small shallot, finely chopped
✅ 1 tbsp fresh chives, finely chopped
✅ 1 tsp Dijon mustard
✅ Salt & freshly cracked black pepper, to taste
For the Butter Seal:
✅ 100g unsalted butter
To Serve:
✔️ Crusty bread, crackers, caperberries, cornichons, or pickled onions
📝 Instructions:
1️⃣ Prepare the Rillettes Mixture:
In a bowl, beat together cream cheese, softened butter, and crème fraîche until smooth. Fold in flaked smoked trout, shallot, dill, chives, Dijon mustard, and lemon zest. Stir until combined but still slightly chunky. Season with lemon juice, salt, and pepper to taste.
2️⃣ Chill the Mixture:
Transfer to individual ramekins or a larger dish. Smooth the tops and refrigerate for 30 minutes to develop flavours.
3️⃣ Make the Clarified Butter Seal:
Melt 100g unsalted butter over low heat. Skim off the foam and pour the clear golden liquid into a separate bowl, leaving milk solids behind.
4️⃣ Seal the Rillettes:
Pour the clarified butter over the rillettes for a thin, even layer. Refrigerate for at least 1 hour.
5️⃣ Serve & Enjoy!
Let sit at room temp for 10-15 minutes before serving. Serve with crusty bread, crackers, caperberries, and pickles.
