One recipe, two delicious snacks!
These Chicken Kababs can be enjoyed in two ways — dip in egg and shallow fry for juicy crispy kababs, or turn them into bakery-style cheese stuffed puff pastries for a flaky, cheesy treat.
Perfect for Iftar platters, tea time, or party snacks. Make the kababs in advance and use them in multiple ways whenever needed.
Bakery-Style Chicken Kabab Cheese Puffs
Ingredients
For Chicken & Stock
1.5 kg chicken with bones
2 chicken cubes
2 tbsp ginger-garlic paste
2 tsp rock salt
1 tsp black pepper powder (or 2 tsp yakhani masala)
2 tbsp oil
1.5 litre water
For Kabab Mixture
Prepared shredded chicken
5 grated potatoes
Salt to taste
2 tbsp red chilli sauce
3 tbsp Veeba Cheddar Melt or grated cheese
1 onion finely chopped
Fresh coriander (kotmeer) chopped
Green chillies finely chopped
1 tsp black pepper powder
2 tsp chaat masala
2 tsp roughly crushed dhaniya-jeera or secret masala
2 tsp thecha or green chilli paste
For Frying
2 eggs
2 tbsp milk
½ tsp salt
½ tsp pepper powder
Oil for shallow frying
For Puff Assembly
Ready-made puff pastry sheets
Mozzarella cheese grated
Cheddar cheese grated
Egg wash (1 egg beaten)
Sesame seeds
Little butter or oil for finishing
Method
1. Prepare Chicken & Stock
In a pressure cooker add chicken, cubes, ginger-garlic paste, salt, pepper/yakhani masala, oil and water.
Pressure cook for 2–3 whistles.
Strain the soup and keep aside for later use.
Remove bones and shred the chicken using a chopper.
2. Make Kabab Mixture
In a large bowl add half of the shredded chicken.
Add grated potatoes, sauces, cheese, onion, coriander, chillies, spices and thecha.
Mix everything very well to form a binding mixture.
Grease hands and shape into kababs.
Tip:
At this stage you can freeze kababs till rock solid, then store in ziplock bags for later use.
3. Fry Kababs (Two Options)
Option 1 – Egg Coated Kababs
Whisk eggs with milk, salt and pepper.
Dip kababs in egg mixture.
Shallow fry till golden and crisp.
Option 2 – Plain Kababs for Puffs
Shallow fry kababs on a tawa with little oil or ghee.
Cook till golden brown.
Cool completely before stuffing.
4. Assemble Cheese Puffs
Place puff pastry sheet on tray.
Brush egg wash lightly.
Add grated mozzarella + cheddar cheese.
Place fried kabab on top.
Fold sheet and seal edges with fork.
Apply egg wash and sprinkle sesame seeds.
5. Bake
Line tray with baking paper.
Bake at 200°C with both rods on for about 15 minutes or till golden.
Brush butter or oil on top for bakery-style glossy finish.
Serve hot with green chutney or ketchup.
Soft inside, crispy outside, and full of cheesy kabab goodness — perfect for Iftar, tea time, or party snacks.
