Ramadan special Peri Peri Lava Chicken Samosas & Bread Pockets — crispy outside, creamy cheesy inside, and perfect to make your Iftaar table extra special. These freezer-friendly starters are easy to prepare in advance and fry fresh whenever needed, making them ideal for busy Ramadan evenings or sudden guests.
Peri Peri Lava Chicken Bites
Ingredients
For the Filling
1 tbsp butter
7–8 garlic cloves, finely chopped
3 to 4 green chillies, finely chopped
1 cup onion, finely chopped
Salt to taste
250 gms boneless chicken, very small cubes
2 tbsp peri peri masala (any brand)
A handful sweet corn
1 tbsp wheat flour
1 cup milk
½ cup fresh cream or home malai
2 tbsp cheddar cheese, grated or Veeba Cheddar melt
Mozzarella cheese, grated (as needed)
Processed cheese, grated (as needed)
Method
Step 1 – Prepare the Filling
Heat butter in a pan.
Add garlic and green chilies. Fry until lightly golden.
Add onions with a pinch of salt and sauté until lightly brown.
Add chicken cubes and cook until tender and dry.
Add peri peri masala and fry well.
Add sweet corn and cook until moisture dries.
Push mixture aside, add wheat flour in the center and roast in butter until nutty.
Mix everything and pour in milk and cream. Cook until thick.
Add cheddar cheese and cook till melted.
Turn off flame and mix in mozzarella and processed cheese.
Your creamy peri peri lava filling is ready.
Step 2 – Prepare Slurry
Mix together:
Salt to taste
1 tsp peri peri masala
5 tbsp cornflour
5 tbsp rice flour
Water to make smooth slurry
Step 3 – Crumb Coating
Mix:
Fine bread crumbs
White & black sesame seeds
Pinch red food color (optional for look)
Step 4 – Shaping
Option 1: Samosas / Rolls
Fill wrappers with the mixture
Dip in slurry
Coat in crumbs
Option 2: Bread Lava Bites
Flatten bread slices with rolling pin
Cut round shapes
Add filling in center
Seal with flour paste
Dip in slurry and coat in crumbs
Step 5 – Freezing & Frying
Place prepared bites on tray
Freeze till solid
Store in airtight container
To fry:
No thawing needed. Fry directly on low–medium heat until golden, crisp, and lava-melty inside.
