Instructions:
1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, flour, baking soda, baking powder, salt, pumpkin pie spice. Stir until well mixed.
3. Combine Wet Ingredients: In another bowl, mix the pumpkin puree, light olive oil, melted coconut oil (or applesauce), maple syrup, and vanilla extract until smooth.
