Creamy Harees Casserole (Serves 4-5)
Ingredients:
2 tbsp ghee
1 big (100g) onion chopped
6 cloves garlic chopped
50g carrot grated
400g minced meat (if your harees is chicken, add minced chicken)
1 tsp crushed pepper
1tbsp cumin powder
1/2 tsp salt (as rq)
1/2 tsp crushed chilli
1 tsp full garam masala
3 tbsp butter
1/4 cup flour
2 cup milk
1/2 tsp crushed pepper
1/4-1/2 tsp crushed chili
1/4 tsp nutmeg
1/2 tsp salt (as rq)
harees used: 1 1/4 kg.
1/2 cup mozzarella cheese
1/4 cup cheddar cheese
crushed chilli
mix herbs
Procedure:
Qeema mixture:
1. In a pot, add 2 tbsp ghee and 1 big (100g) onion chopped. Fry.
2. Add 6 cloves garlic chopped. Fry till gold.
3. Add 50g carrot grated. Fry.
4. Add 400g minced meat (if your harees is chicken, add minced chicken). Fry well.
5. Add 1 tsp crushed pepper, 1tbsp cumin powder, and 1/2 tsp salt (as rq). Fry.
6. Cover and cook on low flame until done.
7. If it is dry, sprinkle some water. Add 1/2 tsp crushed chilli and 1 tsp full garam masala. Mix, cover, and cook for 2-3 mins. The qeema mixture is done.
For white sauce:
8. In a pot, add 3 tbsp butter and 1/4 cup flour. Fry.
9. Add 1 cup milk and mix.
10. Add another cup of milk and mix.
11. Add 1/2 tsp crushed pepper, 1/4-1/2 tsp crushed chili, 1/4 tsp nutmeg, and 1/2 tsp salt (as rq). Mix.
12. Bring it to a boil. If it is thick add 1/2 cup milk and mix. White sauce is done.
13. Total harees used: 1 1/4 kg.
In a baking dish, spread some ghee. Add 1/2 of each harees, qeema and white sauce.
14. Repeat same for the second layer. Then, add 1/2 cup mozzarella cheese, 1/4 cup cheddar cheese, crushed chilli, and mix herbs.
15. In a preheated pot, place the dish. Bake it for 25 minutes or until the cheese melts.
