Egyptian Pickles
Ingredients:
2 cups water boiled and cooled
2 cups vinegar
1-1.5 tbsp sugar
3-4 tbsp salt (pickle salt/sea salt - as rq)
1 tsp citric acid/1 tbsp lemon salt
4-5 cloves garlic
3 jalapeno
300g carrot
300g radish
300g cucumber
300g cauliflower (cleaned well-soak in warm water w/ salt for 10-15 mins)
100g beetroot (opt)
Procedure:
1. In a bowl, add 2 cups water boiled and cooled, 2 cups vinegar, 1-1.5 tbsp sugar, 3-4 tbsp salt (pickle salt/sea salt - as rq). Mix well.
2. Add 1 tsp citric acid/1 tbsp lemon salt. Mix well.
3. Take 4-5 cloves garlic, 3 jalapeno, 300g carrot, 300g radish, 300g cucumber, 300g cauliflower (cleaned well-soak in warm water w/ salt for 10-15 mins), all cut, diced or sliced.
4. Add them to a jar. You can add 100g beetroot too if you wish.
5. Pour the vinegar mixture made earlier.
6. Let it rest for 8-10 days and then refrigerate. It's done!
