🥣 Ingredients for Hara Matar Ka Nimona (UP Style)
Main Ingredients:
Fresh green peas (हरा मटर) – 1 bowl (washed)
Potatoes (आलू) – 2 medium-sized, peeled & chopped
Onion (प्याज) – 2 medium, finely chopped
Tomato (टमाटर) – 1 large, finely chopped
Fresh coriander leaves (हरा धनिया) – for garnish
For Grinding (Green Paste)
Fresh coriander leaves – 1 handful
Green chilies (हरी मिर्च) – 10–12 (adjust to taste)
Ginger (अदरक) – 1 small piece
Garlic (लहसुन) – 1 whole bulb (peeled)
Spices & Seasoning:
Turmeric powder (हल्दी) – 1 tsp
Coriander powder (धनिया पाउडर) – ½ tbsp
Cumin powder (जीरा पाउडर) – ½ tbsp
Garam masala – ½ tsp
Salt (नमक) – as per taste
Asafoetida (हींग) – a pinch
Whole Spices:
Cumin seeds (जीरा) – 1 tsp
Dried red chilies (सूखी लाल मिर्च) – 2
Bay leaf (तेज पत्ता) – 1
Cooking Medium:
Mustard oil (सरसों का तेल) – approx. 35–40 ml (used in stages)
Liquids:
Hot water – about 2 glasses (for gravy)
