Hobo Casserole with Special Guest

1 ½ pounds hamburger
1 small onion, diced
1 tsp salt
1 tsp pepper
6 medium russet potatoes, cubed
2 tsps garlic powder
1 tsp thyme leaves
1 small package mushrooms, cleaned and sliced
1 can cream of mushroom soup
½ cup milk
1/2 cup beef broth
1 small bag of frozen mixed vegetables – about four cups
2 cups cheddar cheese

Preheat your oven to 350 degrees. Put the onion and hamburger in a skillet and brown the meat. Once the meat is brown add the spices, milk and beef stock as well as the mushrooms and cream of mushroom soup. Blend well together and allow it to return to a boil. In the meantime, butter a 9x13-inch casserole dish. Add the meat mixture to the casserole dish covering the bottom. Layer on the cubed potatoes and finish with the frozen vegetables. Cover with foil and bake in the oven at 350 degrees for 45 minutes and then remove the foil and add the cheese to the top. Return to the oven for 15 to 20 minutes. Allow to cool about 15 to 20 minutes before serving.
