This is one of the easiest plant-based meals we make when we don’t feel like cooking.
A batch-cooked sweet potato, homemade hummus, sorghum, hemp seeds, and a simple berry dessert with okara — simple, filling, and delicious, full of nutrients! You can use your fav whole grain such as brown rice, buckwheat, quinoa or farro even to top the hummus filled sweet potato and achieve a complete protein by doing so with all 9 essential amino acids!
