Today I’m sharing my special Butter Loaded Stuffed Pav Bhaji made in cooker – full of flavor, colorful vegetables and rich masala! This recipe is easy, hygienic and better than street style. Perfect for family dinner or party snack.

🥕 Ingredients
For Pressure Cooking Vegetables:
• 2 tbsp oil
• 1 tsp cumin seeds
• 2 tsp pav bhaji masala
• 1 small beetroot (chopped)
• 1 carrot (chopped)
• 2 medium potatoes (chopped)
• ½ cup green peas
• ½ cup cauliflower (chopped)
• 3 medium tomatoes (chopped)
• 1 small cinnamon stick
• 2 green cardamom
• 1 black cardamom
• 1 small star anise
• 1 to 1½ cup water

For Bhaji Masala Base:
• 2 tbsp butter
• 1 tbsp oil
• 1 tbsp ginger-garlic paste
• 1 tsp cumin seeds
• 1 finely chopped red chilli
• 1 medium onion (finely chopped)
• 1 small capsicum (finely chopped)
• Salt to taste
• 1 tsp red chilli powder
• 2 tsp pav bhaji masala
• ½ tsp garam masala
• 1 tsp coriander powder
• ½ tsp black pepper powder
• Fresh coriander leaves
• Juice of 2 lemons
For Tadka:
• 1 tbsp butter
• 1 tbsp oil
• 1 tsp red chilli powder
For Pav:
• 4 pav buns
• Butter for roasting
• Chopped onion
• Chopped coriander
• Green chilli
• Lemon wedges
👩🍳 Method
1️⃣ Heat oil in a pressure cooker. Add cumin seeds and pav bhaji masala.
2️⃣ Add chopped beetroot, carrot, potatoes, peas and cauliflower. Sauté for 2–3 minutes.
3️⃣ Add tomatoes and cook slightly.
4️⃣ Add water and whole spices (cinnamon, green & black cardamom, star anise) in a small strainer.
5️⃣ Close the cooker and give 2 whistles. Turn off gas.
6️⃣ In a separate pan, heat butter + oil. Add ginger-garlic paste and sauté till light golden.
7️⃣ Add cumin, red chilli, onion and capsicum. Sauté well.
8️⃣ Add salt, red chilli powder, pav bhaji masala, garam masala, coriander powder and black pepper. Cook properly.
9️⃣ Add lemon juice and fresh coriander.
🔟 Add boiled vegetables (with remaining water). Mash nicely until smooth.
Add butter and adjust consistency if needed (no extra water required).
11️⃣ Prepare tadka with butter + oil + red chilli powder and pour on top.
✨ Your rich, flavorful Pav Bhaji is ready!
🥖 Stuffed Butter Pav
• Heat butter on tawa.
• Add little bhaji, chopped onion, green chilli, coriander and lemon juice. Mix well.
• Make a hole inside pav using thumb.
• Fill bhaji inside and roast in butter from outside until crispy.
Serve hot and enjoy! ❤️
