Ingredients:
Onions
Carrots
Beetroot
Bell Peppers (Capsicum)
Potato
Tomatoes
Oil
Butter
Cumin
Gingergarlic paste
Salt
Turmeric
Coriander Powder (Dhaniya Powder)
Pav BhajiiMasala
Cilli Powder
Water
Red Chilli flakes
Procedure:
Step 1:
Chop all the vegetables into medium-sized pieces and keep them ready.
Step 2:
Heat a pressure cooker and add 1 tbsp oil and 2 tbsp butter. Add cumin seeds and let them crackle. Now add ginger-garlic paste and sauté until the raw aroma disappears.
Step 3:
Add all the chopped vegetables. Mix well, then add salt, turmeric, coriander powder, pav bhaji masala, and chilli powder. Give it a good mix, add required water, close the lid, and pressure cook for about 5 whistles.
Step 4:
Once cooled, mash the vegetables using a hand blender or a traditional masher until smooth and creamy.
Step 5 (Special Tadka):
Heat a small pan with oil. Add cumin seeds, chopped garlic, red chilli flakes, and a pinch of asafoetida. Fry until golden and aromatic. Immediately pour this tadka over the bhaji, cover with a lid for a minute to trap the flavors, then mix well.
Step 6:
Heat a tawa, add generous butter, chopped onions, fresh bhaji, and mint. Sauté until everything is beautifully roasted and fragrant. Toast the pav with butter until golden.
