Parmesan Chicken Buns (Soft & Crispy!)
These soft, fluffy buns filled with crispy chicken and creamy sauce are absolutely irresistible!
Perfect for lunch, dinner, or even a party snack.

Ingredients
Chicken (prepare first)
• 1 kg chicken pieces (boneless chicken thigh recommended)
• 2 cloves garlic, finely grated
• A small piece of fresh ginger, finely grated
• 1 egg
• 2 tbsp soy sauce
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp paprika powder
• Oregano or dried chives

Buns (10 pieces)
• 400 g all-purpose flour
• 7 g dry yeast
• 5 g salt
• 30 g sugar (about 2 tbsp)
• 15 g soft unsalted butter
• 20 ml oil (2 tbsp)
• 1 egg (size L)
• 140 ml warm milk
• 70 ml warm water

Topping (for the buns)
• Egg yolk (for brushing)
• Parmesan cheese
• Oregano
• Sesame seeds

Sauce (No Onion)
• 2 tbsp mayonnaise
• 2 tbsp Greek yogurt
• A pinch of salt
• 1 tsp lemon juice
• Dill (fresh or dried)
• 1 clove garlic, finely grated (or garlic powder)
• Black pepper

Instructions
1. Marinate the Chicken (Always First!)
Mix the chicken with garlic, ginger, egg, soy sauce, salt, black pepper, paprika, and oregano or dried chives.
Cover and marinate for at least 1 hour (longer = more flavor).

2. Make the Dough
1. Combine all bun ingredients and knead for 10 minutes until soft, smooth, and elastic.
2. Lightly oil the dough, cover, and let rise in a warm place for about 60 minutes, until doubled in size.

3. Shape the Buns
1. Divide the dough into 10 balls (about 75 g each).
2. Rest for 10 minutes.
3. Roll each ball thin, fold in half, and place on a parchment-lined baking tray.
4. Cover and let rise again for 25 minutes.

4. Bake
• Preheat the oven to 200°C (top & bottom heat).
• Brush the buns with egg yolk.
• Sprinkle with Parmesan cheese, oregano, and sesame seeds.
• Bake for 10–12 minutes until golden.
• Cover immediately with a clean kitchen towel to keep them soft.

5. Cook the Chicken
Lightly coat the marinated chicken in flour.
Fry until crispy or cook in the air fryer until golden and crunchy.

6. Make the Sauce
Mix mayonnaise, Greek yogurt, salt, lemon juice, dill, garlic, and black pepper until smooth.

7. Assemble
Slice the warm buns open and fill with:
• Crispy chicken
• Fresh tomato slices
• Pickles
• Creamy sauce
