Chicken Lababdar, a butter chicken style dish with a twist
Serves 1, although this recipe includes the ingredients for 2 & 4 servings, just scroll down :)
A scrumptious restaurant style curry with a rich, creamy and super flavourful gravy, a perfect butter chicken substitute

Ingredients
oil (2 tbsp)
cardamon pod 1
cinnamon 1"
clove 1
bay leaf 1
mace 1 blade
cumin seeds 1/4 tsp
onion 100g (chopped finely)
garlic puree 2 tsp
ginger puree 1 tsp
green chillies 2 (sliced finely)
salt 1/4 tsp
chilli powder 1/2 tsp
coriander powder 1/2 tsp
ground black pepper - 1/4 tsp
tomato - 2 (chopped finely)
chicken 250g
250ml base
almond powder 1 tbsp
fresh coriander 1 tbsp
methi 1/2 tsp
garam masala 1/4 tsp
butter 1 tbsp
cream 4 tbsp
1" fresh ginger - julienne cut
Method
1. heat the oil over a low-medium heat and add the cardamon pod, cinnamon, clove, bay leaf and the mace
2. when the hard spices start to form little bubbles add in the onion and cumin seeds and fry until soft and golden
3. stir in the garlic, ginger, green chillies and salt and fry for a minute
4. add the chilli powder, coriander powder, ground black pepper and chopped tomatoes, stir through and cook for a few minutes until the tomatoes mush and the oil separates
5. if you are using raw meat add it now along with the ground almonds and a little base if needed. Coat well and allow the masala to penetrate the meat for a couple of minutes
6. add the rest of the base, stir through well and remove the whole spices
7. allow to reduce for around 5 minutes then add the fresh coriander (retaining some for decoration), methi, garam masala, butter, cream and the fresh ginger (retaining some for decoration). Allow the cream and butter to come to temperature and stir in carefully
8. reduce on a medium heat until the sauce is the consistency you require and the meat is cooked through
9. serve with the remaining coriander and julienne ginger
For 2 servings:
oil (4 tbsp)
cardamon pod 2
cinnamon 1.5"
clove 1
bay leaf 2
mace 1 blade
cumin seeds 1/2 tsp
onion 200g (chopped finely)
garlic puree 4 tsp
ginger puree 2 tsp
green chillies 3 (sliced finely)
salt 1/2 tsp
chilli powder 1.5 tsp
coriander powder 3/4 tsp
ground black pepper - 1/2 tsp
tomato - 4 (chopped finely)
chicken 500g
500ml base
almond powder 2 tbsp
fresh coriander 2 tbsp
methi 1 tsp
garam masala 1/3 tsp
butter 2 tbsp
cream 140ml
1.5" fresh ginger - julienne cut
For 4 servings:
oil (6 tbsp)
cardamon pod 2
cinnamon 2"
clove 2
bay leaf 2
mace 2 blade
cumin seeds 3/4 tsp
onion 400g (chopped finely)
garlic puree 2.5 tbsp
ginger puree 1.5 tbsp
green chillies 5 (sliced finely)
salt 1 tsp
chilli powder 1.5 tsp
coriander powder 1.5 tsp
ground black pepper - 3/4 tsp
tomato - 8 (chopped finely)
chicken 1kg
1 litre base
almond powder 4 tbsp
fresh coriander 4 tbsp
methi 1.5 tsp
garam masala 3/4 tsp
butter 4 tbsp
cream 280ml
2" fresh ginger - julienne cut
