Ingredients:
2 teaspoons extra virgin olive oil
1 small onion, chopped
4 cloves garlic, minced
2 teaspoons McKay’s savory seasoning or other chicken like seasoning
1 teaspoon turmeric powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon thyme
1 teaspoon Mrs. Dash
3/4 cup carrots, diced
3/4 cup celery, minced
1 cup zucchini, minced
1 cup quinoa, cooked with onion, garlic and seasoning salt
1 teaspoon salt or to taste
10 Zucchini
Instructions:
Scoop out the middle of your zucchini into a boat shape and bake at 350 degrees Fahrenheit for 7-10 minutes.
Sauté in olive oil the onion and garlic for 3 minutes. Gradually add all your other vegetables and allow to cook for 3 minutes. Add your tofu and spices and allow the mixture to simmer and come together for an additional 3-5 minutes. Stuff the mixture into your boats and enjoy!
