糯米飯 Chinese Sticky Rice

This recipe was made with tools and ingredients readily available in most home kitchens. The topping was made with ingredients that my family likes and were available at the time of cooking. Use your family’s favorite ingredients to get the most enjoyment out of this dish.
You will need:
1 large nonstick pan
1 small sauce pan
3 c glutinous rice
Canola oil and salt
Topping ingredients:
1/4 c dried shrimp (soaked and diced)
2 dried scallops (soaked and diced)
1 c chestnut (cut into quarters)
2 Chinese sausages (skinned and diced)
4 medium shiitake mushrooms (soaked, diced and reserve the liquid)
2 stalks green onion (diced)
Sauces (to taste):
1 TBS sesame oil
2 1/2 TBS oyster sauce
1 TBS soy sauce
In the small sauce pan, add 1 TBS canola oil then put all the topping ingredients (not the green onion) into the pan. Cover and put on the stove on low heat. Stir it once in awhile to make sure not to burn the topping. Cook it through.
In the large nonstick pan, washing 3 c of glutinous rice. Wash the rice 4Xs or till the water runs clear. Drain. Add 2 TBS of canola oil and 1/2 TBS of salt to the rice. Mix well then add liquid.
*Adding liquid to the rice and an important step. You only want about 1/2” of liquid to cover the rice. Use the reserved liquid from the mushroom to get extra flavor into the rice. If there’s not enough mushroom liquid, add chicken broth or water to reach the desired level of liquid needed.
Cover and put on the stove on medium heat till it starts to boil, then turn the heat down to low. Stir often to make sure the bottom doesn’t stick. Rice should start to cook in about 15 mins. If all the water is absorbed and most of the rice is still not cooked through, add no more than 1/8 c of liquid and mix well. Then cover and continue cooking in low heat till the rice is cooked. The rice will turn translucent when it’s cooked through. Cooking time varies depending on your stove and the pot you’re using.
Add the sautéed topping, green onion, 1 TBS sesame oil, 2 1/2 TBS oysters sauce and 1 TBS soy sauce to the rice and mix well. Taste test your creation to adjust oyster sauce and soy sauce to your liking then serve.
This recipe makes 5-6 servings.
