Shami Kabab Recipe
Description
Shami Kabab is a delicious and flavorful pan-fried patty made with boneless chicken, chana dal, and aromatic spices. These kababs are crispy on the outside and soft inside, making them a perfect snack, appetizer, or side dish. They can also be frozen for later use and quickly fried whenever needed.
Ingredients
For Cooking the Chicken & Dal:
Chicken (boneless) – 250g
Chana Dal – 1 cup (soaked for 30 minutes)
Whole Garam Masala:
Bay leaves – 1-2
Cloves – 2-3
Peppercorns – 4-5
Cinnamon stick – 1 small
Star anise – 1
Mace – 1 small piece
Green cardamom – 2
Onion – 1 (sliced)
Ginger – 1-inch piece
Garlic – 4-5 cloves
Salt – to taste
Whole red chilies – 3-4
Water – as needed
For Mixing & Shaping:
Bread crumbs – 1 cup
Onion (chopped) – 1 medium
Green chilies (chopped) – 3-4
Hara Dhaniya (coriander leaves, chopped) – handful
Mint leaves (chopped) – handful
For Frying:
Oil – 2 tbsp
For Serving:
Coriander chutney
Yogurt
Onion rings
Lemon wedge
Method
Step 1: Cook the Chicken & Dal
Wash and soak chana dal for at least 30 minutes.
In a pressure cooker, add:
Boneless chicken
Soaked chana dal
Whole garam masala (bay leaves, cloves, peppercorns, cinnamon, star anise, mace, cardamom)
Sliced onion, ginger, garlic, salt, whole red chilies
Water as required
Close the lid and cook until everything is well done. If using a stovetop, cook until the dal is soft and the water evaporates.
Step 2: Blend the Mixture
Remove bay leaves and whole spices (optional) and grind the mixture into a smooth paste.
Transfer the mixture to a large mixing bowl.
Step 3: Add Fresh Ingredients
Add:
Bread crumbs
Chopped onion
Chopped green chilies
Chopped coriander and mint leaves
Mix everything well.
Step 4: Shape the Kababs
Take small portions of the mixture and shape them into round or oval kababs.
You can freeze them at this stage for later use.
Step 5: Fry the Kababs
Heat 2 tbsp oil in a frying pan.
Fry the kababs on both sides until golden brown and crispy.
Step 6: Serve
Serve hot with coriander chutney, yogurt, onion rings, and a lemon wedge.
Tips & Variations
✔ For a spicier flavor, add crushed red chilies or black pepper.
✔ Can be air-fried for a healthier version.
✔ Best enjoyed with paratha, naan, or as a burger patty.
Air Fryer Method
Preheat the Air Fryer to 180°C (350°F) for 3-5 minutes.
Lightly grease the air fryer basket with oil spray or brush it with a little oil.
Place the shaped Shami Kababs in a single layer, ensuring they are not touching.
Brush or spray a little oil on top of the kababs for a crispy texture.
Air fry at 180°C (350°F) for 12-15 minutes, flipping halfway through.
Once golden brown and crispy, remove and serve hot with coriander chutney, yogurt, onion rings, and lemon wedges.
Tips for Air Frying Shami Kababs
✔ Don’t overcrowd the air fryer basket; cook in batches if needed.
✔ For extra crispiness, coat the kababs lightly with egg wash or breadcrumbs before air frying.
✔ Adjust cooking time based on your air fryer model; some may take slightly longer or shorter.
✔ No need to thaw frozen kababs before air frying—just increase cooking time by 2-3 minutes.
