The air is intoxicating, filled with the warm, earthy aromas of cumin, coriander, and allspice, all brightened by a sharp hit of fresh lime. The flavour is a perfect balance of smoky spice, a gentle sweetness from the honey, and a zesty, acidic finish that ties it all together in one satisfying, scoop-able stew.

This is my go-to recipe for a fast, hearty, and flavourful weeknight dinner! This Moroccan-Spiced Chicken is all cooked in one pan and delivers such a huge depth of flavour. We build a fragrant base with toasted spices, simmer the chicken and carrots until they're super tender, then add chickpeas for a hearty boost.
My secret for a perfect, restaurant-quality sauce? We remove the chicken and veggies at the end and thicken the broth with a cornflour slurry to make it rich, velvety, and delicious.
Ingredients:
600g Chicken Thighs, boneless and skinless, cut into 3cm pieces
1 tablespoon (20ml) Olive Oil or Vegetable Oil
1 large Brown Onion (approx. 200g), finely chopped
1-2 Carrots (approx. 150g), diced
3 cloves Garlic (approx. 15g), minced
2 tablespoons (approx. 20g) Moroccan Spice Blend
½ teaspoon (approx. 1g) Ground Allspice
½ teaspoon (approx. 1g) Chilli Powder or Flakes
1 ½ cups (375ml) Chicken Stock
1 x 400g can Chickpeas, drained and rinsed
1 tablespoon (20ml / 30g) Honey
1 Lime, juiced (approx. 20-40ml)
1 tbsp (10g) Cornflour + 2 tbsp (40ml) Cold Water (for slurry)
Salt and Black Pepper to taste
