Creamy Hellim & Tomato Orzo
My family and I LOVE this dish. The flavour combination of tomatoes, sweet sautéed onions, grated hellim and dried mint is just heavenly.
Monday night supper, done!
INGREDIENTS
Serves 4
1 large onion, finely chopped,
2 carrots, finely chopped,
2 celery sticks, finely chopped,
3 cloves garlic, finely chopped,
1 can of chopped tomatoes,
300g of orzo,
2 tbs of olive oil,
¼ tsp of ground cinnamon,
¼ of pul biber,
salt and pepper to taste,
1 tbs of tomato purée,
1tbs of sweet red pepper paste
1 litre of chicken or vegetable stock
(if you feel like it needs a little more liquid whilst cooking, add another 1/2 mugful boiling water),
1 tbsp finely chopped parsley,
1 tbsp dried mint,
200g hellim or halloumi cheese (roughly 1/3 finely grated, and the rest cut into small cubes and lightly fried)
Good pinch cracked black pepper (the hellim is quite salty so I don’t always add salt)
METHOD
Finely chop the onions, carrot, celery, and garlic and sauté on a low heat for around 10 mins.
Then, add the spices, tomato paste and red pepper paste and give it all a stir.
Add the chopped tomatoes, parsley, orzo and stock (ratio 3 1/2 times amount of stock to orzo) and cook on a low heat for a further 12-15 mins.
Stir in the finely grated hellim, dried mint and a little more parsley once the pasta’s cooked.
Cube and fry off the rest of the hellim (because, why not eh?) and stir it in with the rest of the orzo
