Lentils with Preserved Lemons | Fresh P

Описание: This lentils salad with preserved lemons is delicious warm or cold. Serve it as a meatless main dish alongside a green salad, or as a side dish. It makes a wonderful filling for Middle Eastern style wraps with fresh spinach and a drizzle of tahini sauce.

INGREDIENTS
1 cups lentils, green, French green or black beluga
2 carrots, small dice
1 rib of celery, small dice
3-4 shallots or 1/2 a large onion, small dice
1 teaspoon za'atar or 1/4 teaspoon thyme and a few toasted sesame seeds
1/4 preserved lemon, minced (see link above)
2-3 tablespoons of the thick lemon butter (see link for lemon oil above)
preserved lemon oil for drizzling (see link above)
chives or scallions, sliced thin
Sea salt & black pepper

DIRECTIONS
Bring salt water to a boil over high heat, add the lentils and cook until just tender, 20-25 minutes. Drain, rinse and set aside.

Over medium heat saute the carrots, celery and shallots for about 4 minutes. Add the za'atar and continue to sauté another minute or two. You want the vegetables to be crisp tender.

In a large bowl combine the lentils, vegetables and the cut up lemon wight he lemon 'butter'. toss gently. Add in the chives or scallions, salt and black pepper to taste. Serve drizzled with lemon oil and thin strip of pickled lemon.

This is a wonderful salad to serve on hot days, as it holds up beautifully and is just as tasty at room temperature.
