While there are a wide variety of egg substitutes (such as ground flaxseed), applesauce is best when making moist & dense baked goods such as no egg banana breads & muffins. It does not work as well in light & airy cakes (and you should use something other than applesauce as the egg substitute). Banana bread with applesauce helps to create an extra moist banana bread.
