Roscón de Arequipe is a Colombian sweet bread made with Arequipe also known as dulce de leche. It makes a great desert to take to a party. This was my first time making this Colombian dessert and it came out fantastic. Please let me know what you think :)
2 1/4 teaspoons of yeast or 1 envelope
7 oz., plus 4 tablespoons of warm water
4 cups of all purpose flour
1 teaspoon of salt
1/2 cup of sugar, plus more for garnish
1/2 cup of unsalted butter, melted
1 tablespoon of vanilla extract
2 large eggs at room temperature
1 beaten egg for the glaze
2 tablespoons of melted butter for the glaze
2 cups store bought or homemade arequipe or dulce de leche
Add 7 ounces of warm water into a bowl. Add 2 1/4 teaspoons of active yeast. Mix in 1/4 cup of sugar and stir. Add in the remaining 1/4 cup of sugar.
In a large bowl, add 4 cups of flour, the salt and the water with yeast. Add two eggs, 1 tablespoon of real vanilla extract and 1/2 cup of butter.
Wait about ten minutes for the yeast to begin to grow.
In a large mixing bowl add the flour, salt, remaining sugar and the water and yeast mixture and begin mixing. Use your hands for this, as you really get the perfect feel for the consistency of the dough. Add the butter, vanilla and eggs. Mix well
Mix the dough and kneed for 8-10 minutes on a lightly floured surface.
Place in a lightly oiled bowl, cover and place an a warm place like an oven for 2 hours. It needs to double in size.
Lightly flour your surface and take out the dough, punch it for about 20 seconds and place back in the bowl and cover with a towel for 10 minutes.
Take out dough and cut into two even pieces. Roll the dough into a long rectangle.
Add 5 ounces of arequipe to the center of the dough and roll it up like a jelly roll. Form it into a circle and place on parchement paper.
Take some scissors and snip every 1.5 inches around the top.
Take 1 egg and mix in a bowl. Then add two tablespoons unsalted butter. Take a pastry brush and lightly coat the top of the dough and sprinkle some sugar on top.
Place in a 400 degree oven for 15-20 minutes, or until the top is looking nice and golden brown.
Let cool, cut and serve.
