Adai is one of the popular traditional dishes of Tamil Nadu, made using lentils and rice and usually eaten for breakfast or dinner with aviyal as a side dish. The coarse consistency of the lentils provides a mouthful bite which is so unique in texture.
While preparing the batter, I tried a different level of consistency and arrived at a specific combination of the same ingredient for an overall better flavour and texture. It can be eaten with different varieties of side dishes or even with just curd or butter or jaggery or coconut chutney. Adding a vegetable makes the adai even more tasty and healthy, so it is easier to manage even with carrots as a surprise twist in the meal. This has become one among the favourite meals in my family.
Cooking the coarse batter needs a bit of additional attention, it is good to flip and check at regular intervals for the brown spots and cook evenly, otherwise the adai may feel with raw batter! Cooking it a bit as crispy provides an additional chewy crunch which tastes better with just curd as a side dish.

Ingredients:
1 cup Raw Rice
12 - 15 Dry Red Chillies
⅓ cup Toor dal
⅓ cup Urad dal
⅓ cup Gram dal (chana dal)
2 sprig Curry Leaves
1 cup chopped Shallots / Onion
1 cup grated Bottle Gourd
½ tsp Asafoetida (Hing)
2 tsp Salt
1.5 cups Water
Good to make about 8 yummy Adai!
