This is a quick and easy Prawn Pickle which my grandmother made
It has the perfect balance of sweet, spicy and tangy.
Ingredients
Ingredients for prawn marinade
350 gms Prawns - Peeled, deveined and washed
1/2 teaspoon Kashmiri chilli powder
1/2 teaspoon turmeric powder
1/2 teaspoon salt
Ingredients for Prawn Pickle Masala
10 to 12 garlic cloves
1 and 1/2 tablespoon Mustard seeds
150 ml White Vinegar
2 tablespoons Kashmiri chilli powder
1 tablespoon Cumin powder
1/2 teaspoon Turmeric powder
1 teaspoon garam masala powder
3/4 teaspoon salt
2 tablespoons Jaggery
150 ml oil
Method
Marinate 350 gms Prawns (Peeled, deveined and washed) with 1/2 teaspoon Kashmiri chilli powder,1/2 teaspoon turmeric powder,
1/2 teaspoon salt and keep aside
In a mixer grinder add 10 to 12 garlic cloves, 1 and 1/2 tablespoon Mustard seeds, 75 ml White Vinegar and grind to coarse paste. Keep aside
Place a wok or kadai on medium high heat add 150 ml oil
As the oil is nice and hot add the marinated prawns to this and fry the prawns for 5 minutes, evaporating all the water in the prawns
Remove in a bowl and keep aside
Now in the same oil add the Garlic - mustard paste kept aside and stir fry this for 2 minutes
Add to this 2 tablespoons Kashmiri chilli powder, 1 tablespoon Cumin powder, 1/2 teaspoon Turmeric powder, 1 teaspoon garam masala powder, 3/4 teaspoon salt and fry all the masalas for 1 minute
Add 2 tablespoons Jaggery, 75 ml white vinegar and stir everything and cook for another minute
Add the fried prawns kept aside to this cooked masala and stir everything, coating all the prawns in this masala
Finally add 2 to 3 tablespoons oil over this and stir
Remove from heat and let it cool
Store in an air tight jar in the refrigerator
Preferable eat after 2 days
Enjoy this pickle with some simple dal chawal or vegetables
